This fish is high in omega fatty oils. That makes it healthy and easy to cook. The oils make it difficult to over cook. Thus leaving this dish moist and delicious.

 This method is my favorite way to cook a steak at home. It's a good way to get a "steak house" taste without leaving your kitchen.  
Remember, the first step is the most important and the one usually left out. Bring the steak to room temperature before cooking.
